★★★ The rainy background to slumber was fading out as people finally woke up. By noon a touch of sun was shining, off and on, colorlessly. The jeans and the parka stayed in their closets in favor of lightweight pants and a hoodie. The air outside felt as soggy as the pulpy leaves underfoot. The pear leaves were trying their best not to surrender their curl. Little daubs and squiggles of cloud hung below blurry swirls. People shot baskets on the wet courts. Down in the Park, mallards dabbled in the margin of clear water between the fractured sheet ice and the shore. Kids scooped up ice chunks on the other shoreline and heaved them to go splintering and skidding over the surface. From the mid-upper reaches of the path on the downtown side of the Great Hill, the flooded footpath down by the water shone silver through the trees. Curbside Christmas trees sent their final festive note of evergreen scent to float on the damp, mild air.

WE PRESENT INSTRUCTIONS in aid of the assembly of sandwiches selected from Institution Recipes For Use In Schools, Colleges, Hospitals And Other Institutions, by Emma Smedley, Director of Public School Luncheons, Philadelphia, Pa.; Formerly Instructor in Domestic Science, Drexel Institute, Philadelphia, Pa.; Instructor in Dietetics, The Johns Hopkins Hospital Training School for Nurses, Baltimore, Md, published in 1919 and available at archive.org for the delectation of all.

Chicken Sandwich
(50 Sandwiches)

3 pounds chopped chicken meat
2 tablespoons chopped parsley
2 teaspoons salt
1 teaspoon cayenne
1 cup Mayonnaise
8 ounces butter
100 slices bread
2 heads lettuce

Mix the first five ingredients and spread on the bread, add shredded lettuce, cover with buttered slice of bread and press lightly together.

Calories in one sandwich: 80 protein, 384 total
