WEATHER REVIEWS
New York City, August 1, 2024
★★ The humidity was down a little and the heat was up. A pedestrian veered left on the sidewalk and extended an arm toward the backspray from the opened hydrant. The sun stung the skin and made it impossible to cast an eye up anywhere near it. Again the subway platform was hotter than anything above; on board, a woman stood by the train doors with a little pink battery-powered fan in one hand. The taste of sweat mixed with sunscreen trickled into the mouth under the mask. The sun's heat felt punitive, even when facing away from it. Back indoors, the lights stayed off for the afternoon, notwithstanding the air conditioning. Past the crest of the heat, huge insects zigged and zagged over the avenue. A few clouds were in the north but the rest of the sky was empty, slightly haze-faded, and grimier by the horizon. Companionable shadows stretched along the sidewalk in the ripened light.

Ribbon Tongue Sandwich with Parmesan à la Bernard
Sandwich de Langue au Parmesan à la Bernard
For Six Persons
Eight slices of bread, three tablespoons of butter, one cup of ground tongue, two tablespoons of Parmesan cheese, cayenne pepper and salt.
How to Make It. Slice the bread thin and trim off the crust, stir the butter, add to it the cheese and then stir it to a cream. Add the tongue and stir it until nice and smooth, then add cayenne pepper and salt to taste. Coat one slice of bread with the mixture then put a slice of bread on top of that and coat that again and repeat this until you have used the eight slices of bread; press it together firmly and put in the ice-box to get cold, and when cold, slice it and cut it in diamond shape. These sandwiches are used for afternoon receptions and also as an appetizer.
